Greek Yogurt Napa Chicken Salad Sandwich

This fruity chicken salad sandwich is not short on flavor!

I used a ton of fresh fruits, along with golden raisins, crunchy slivered almonds, and diced celery. I substituted Greek yogurt for mayonnaise because I love the flavor and it can be used in more ways than mayo. I like foods that can multitask! You could easily use leftover shredded chicken for this recipe, but I kept it super simple and used canned. With summer on the way, this is a perfect cool lunch for a warm day!


Greek Yogurt Napa Chicken Salad Sandwich

Time: 10 minutes
Serves: 4

Ingredients:

  • 10oz canned chunk chicken breast packed in water

  • ½ cup Greek yogurt (I prefer full-fat)

  • Dash of salt and pepper

  • Juice of ½ lemon

  • 2 celery stalks, diced

  • 1 small red apple, diced

  • ½ cup grapes, halved

  • ¼ cup slivered almonds

  • ¼ cup golden raisins (no sugar added)

  • 4 Bibb lettuce leaves

  • 8 slices 100% whole grain bread (like Ezekiel bread)

Directions:

  1. Stir together yogurt, salt, pepper and lemon in a large bowl.

  2. Stir in chicken, celery, apple, grapes, almond and raisins until well combined.

  3. Build sandwiches with one lettuce leaf and ¼ of the chicken salad mixture.
