Easy and Delicious Slow Cooker Taco Soup with Avocado and Tomatoes

Taco Soup is extra easy in the slow cooker

This is literally the easiest taco soup you will ever make and I promise your whole family will love it. Just chop up some veggies, brown the ground beef, throw it all into the slow cooker with some spices, and the heat of that magic cooking machine does the rest of the work for you.

I can’t believe I waited so long to get a slow cooker. Mine was a wedding shower gift from a friend (thanks, Kacy!) and now I can’t understand how I ever lived without it. This is the slow cooker I currently have, but I’ve had my eye on this one because it sautés and steams and you can program your cooking time.

You can customize this taco soup recipe to work for you!

Most of my recipes are super flexible to accommodate what you have available in your kitchen. In this recipe, for example, you can use any type of salsa you have on hand and you can even use ground chicken or turkey in place of ground beef.

The only way to truly be successful with a real food lifestyle is to make it work for YOU, so use recipes as a guide to use up foods you already have in your home. That is one of my top real food rules! There are lots of fun toppings, too, like olives, avocado, green onions, plantain chips or tortilla chips.

I think it is also important to keep real food affordable. Sure, it’d be awesome to go to the grocery store and purchase only organic produce and grass-fed meat, but that isn’t always practical. Buying canned or jarred veggies, like the tomatoes and diced green chiles used in this taco soup, is a great way to keep a bit of money in your pocket. Easy and Delicious Taco Soup

Total Time: 8 hours

Yield: Serves 8

Easy and Delicious Taco Soup

Ingredients:

  • 1.5 lbs ground beef
  • 5 cups beef broth or stock
  • 1 cup salsa of choice
  • 1 red onion, peeled and diced
  • 4 garlic cloves, minced
  • 4 medium tomatoes, diced (or two 14.5 oz cans diced, drained)
  • 1 4oz can diced green chiles,
  • 1 tsp chili powder
  • 1 tsp. ground cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/4 tsp. onion powder
  • 1/4 tsp. crushed red pepper flakes
  • Salt and pepper to taste

Directions:

  1. Heat a large skillet over medium heat. Add ground beef and cook until fully browned, breaking meat up with a wooden spoon as it cooks. About 10-12 minutes.
  2. Drain fat from meat and add to a slow cooker with remaining ingredients. Stir well.
  3. Cook on low for 6-8 hours. Stir well before serving.

Notes

Storage Instructions - Allow soup to cool to room temperature. Fill freezer bags (large or individual sized) about 3/4 full and press as much air as possible out of the bag. Label with name of contents and date and lay flat to freeze. Freeze for 2-3 months. Defrost in refrigerator overnight or place in a large bowl of warm water to thaw. Reheat in large saucepan or in a microwave safe container.
